Pillot managed to produce the equivalent of two and a half barrels of the 2021 Chassagne-Montrachet 1er Cru Les Grandes Ruchottes, and again, despite the low yield, the resulting wine is brilliant, exhibiting aromas of pear, orange zest, bread dough, bee pollen and struck flint. Medium to full-bodied, satiny and chiseled, with racy acids and chalky structuring extract, it concludes with a long, saline finish.
