The 2006 Cabernet Sauvignon has a deep garnet color and an evolving nose of warm cherry, cranberry, licorice, dark chocolate and some earthy / gamey notes. Crisp with a medium level of fine tannins, this full bodied Cab has a very good concentration of primary berry fruit and a lingering finish of spiced cassis. Drink it now to 2015. Hunter Valley winery Poole’s Rock produces a range of good value wines under this Cockfighter’s Ghost label. In the New South Wales report earlier this year, their Hunter Valley Semillon was reviewed.
