The 2005 Vin Santo del Chianti caresses the palate with layers of expressive, radiant fruit. Dried flowers, figs, prunes, spices, leather and licorice are some of the aromas and flavors that blossom from this delicious dessert wine. The finish is long and delicate. Readers should plan to open the Vin Santo in advance, as the wine needs some aeration to find its center. The estate’s Vin Santo is made from white grapes, Trebbiano and Malvasia in this case, that are dried for five months prior to being vinified and aged in the traditional small oak casks for six years. Anticipated maturity: 2011-2015.
