The 2020 Cabernet Sauvignon Paulina's Reserve comes from 7-year-old vines on the estate and other lots from purchased fruit. There is a two week skin maceration, and it undergoes a shorter maturation period in 30% new oak. With brambly, red berry fruit, melted tar and cedar on the nose, this is certainly well-defined. The palate is medium-bodied with firm tannins, pastille-like red berry fruit and a subtle marine influence; this is not a complex Cabernet, but it conveys a sense of class.
