The 2017 Vermentino di Sardegna Chimera does a great job of presenting the varietal character of the grape along with some of the wild sage and salty aromas that you get with Mediterranean-island winemaking. The hot vintage conditions of 2017 have helped to amplify those aromas of peach and pear, setting the table for a classic Sardinian plate of calamari stuffed with anchovies, bread crumbs, garlic and parsley. Vines for this wine were planted in faraway 1965 to 1975 in loose, sandy soils.
