Tannic, but classically constructed, the 1995 Cabernet Sauvignon Unfiltered offers rich cassis fruit intermixed with loamy soil scents, pain grille, and floral notes. Long in the mouth, with an expansive texture, impeccable symmetry, and fine overall balance, this wine finishes with a tannic clout, as well as outstanding ripeness and presence in the mouth. It should be long-lived, but will be ready to drink at an early age. Anticipated maturity: 2002-2020. Newton's Cabernets cut a broader, more textured mouth-feel than the Merlots All of the Newton wines are fermented with natural yeasts in order to obtain more complex aromatics. The malolactic fermentations take place in barrel to promote greater integration of wood, and to encourage more textural richness in the wines.
