The 2007 SBS is composed of 73% Sauvignon Blanc and 27% Semillon. There was no malolactic fermentation. The excellent perfume reveals notes of minerals, citrus, melon, lime, apple, and a hint of tropical fruits. Crisp and lively, the wine has excellent acidity and a lengthy finish. The Middleton family owns this Walla Walla start-up with plans to plant an estate vineyard in 2008. Their winemaker is Virginie Bourgue, a youthful French ex-pat.
