The 1997 Claret, a selection made from younger vines and/or barrels that are deemed not rich enough for the Merlot or Cabernet Sauvignon program, reveals some herbaceousness (mostly green peppercorn scents), sweet red currant fruit, and a spicy, medium-bodied, lush texture. It is ideal for drinking over the next 2-3 years.All of the Newton wines are fermented with natural yeasts in order to obtain more complex aromatics. The malolactic fermentations take place in barrel to promote greater integration of wood, and to encourage more textural richness in the wines.
