The barrique-aged 1999 Cabernet Sauvignon Cuvee Prestige was produced from destemmed grapes that received the Burgundian pigeage treatment (punching down of the cap during fermentation), and bottled with no fining after a negligible filtration by gravity. This opaque ruby/purple-colored Cabernet offers boisterous black currant fruit and a thick, full-bodied texture. While lack of complexity may be a shortcoming, the mouth coating levels of extract and richness are impressive. I tasted a five-year old cuvee of this wine, which was displaying Cabernet Sauvignon's cedar, spice box, and licorice notes. Sadly, there are only 7,000 bottles of the 1999, a blend of 80% Cabernet Sauvignon, 15% Merlot, and 5% Petit Verdot. Drink it over the next decade.
