The medium pink-colored 2007 Real de Aragon Cava Rosado is composed of 100% Garnacha. It offers up a tempting nose of cherry blossom and strawberry leading to a dry, savory bubbly with excellent volume and length. It can be enjoyed over the next 4 years. The Real de Aragon Brut Rosado, made from 100% Garnacha, is light cherry red in color and slightly reticent aromatically. On the palate it has a slightly bitter note taking it out of the realm of casual aperitif. It requires food to show at its best, something that was lacking when I tasted it.There are scattered places throughout Spain entitled to use the Cava designation although the vast majority comes from Catalunya in general and Penedes in particular.
