The 2007 OLYMPUS WHITE is Xynisteri, according to the importer, although the label is silent in that regard. It is light, with little concentration, but as it warms up, it provides some tropical fruit aromatics and pleasing flavors. It seems a little more perky then, too. There is a basic and simple feel to this wine, given its modest concentration and finish, but it can be a pleasant quaffer if drunk chilled. Drink now. Although it is noted nowhere on the labels, Etko, a big Cypriot producer founded in 1844, is the sole owner of Olympus, a newly built winery.
