Exhibiting a beautifully ripe and floral nose, Pillot's Chassagne-Montrachet Les Caillerets has all the attributes of an outstanding wine except for its continuity on the palate. As with the La Grande Montagne, this wine has a slight hollowness on the mid-palate. This being said, I was impressed by its thick, ripe, highly-focused, and complex medium-to-full body and its layers of stone, cardamon, and minerals. It should be consumed between 1999 and 2004.
