A blend of 80% Grenache, 15% Syrah and 5% Carignan fermented and aged in stainless steel, the 2016 Ventoux offers perfumed aromas of cherries, cinnamon and cracked pepper. That promise isn't quite delivered on the palate, which shows strong green peppercorn spice, medium body and astringent tannins. Try it with rare beef or lamb to help tone down its palate-drying aspects.
