The lineup here starts with the 2005 Petit Caus White, a blend of 70% Xarel-lo, 15% Macabeu, 5% Muscat, 5% Chardonnay, and 5% Chenin Blanc. Light straw-colored, it has a superb nose of slate and other minerals, green apple, and lemon/lime. This is followed by a crisp, nicely focused, dry wine with excellent length. It would be a fine match for oysters and clams on the half-shell. Drink it over the next 12-18 months.
Carlos Esteva is the man behind these intriguing white wines. His M.O. bears a certain resemblance to that of Kalin Cellars’ Terry Leighton particularly with regard to releasing wines only when he feels they are ready to be drunk.
