The 2020 Guitian Godello Sobre Lías was one of the first whites to mature in stainless steel with the lees and basically created the style for the appellation. The grapes from the slate and schist soils underwent a four-hour maceration after being destemmed and lightly crushed. After letting the juice settle for 48 hours, it fermented in stainless steel with indigenous yeasts and then was kept in tanks with the lees for four months during which time the lees were stirred weekly. It's still faintly reductive but already shows the varietal character and the subtle leesy/smoky character with a base of white fruit, still undeveloped. It's juicy and round, with 13.5% alcohol and nice balance. Varietal, with potential to develop in bottle. It finishes with the classical bitter twist in the finish. 10,000 bottles produced. It was bottled in April 2021.
