The 2000 Sauvignon Blanc Zieregg, produced entirely in new oak (60% foudres and 40% barrels, Tement changes these percentages depending on the quality of the vintage), has a nose of toasted oak and minerals. This satin-textured, rich, intense, medium-bodied wine has outstanding depth of fruit. At present, its character is dominated by wood, yet, much like the finest white Bordeaux, it will undoubtedly absorb it with cellaring. Anticipated maturity: 2004-2012.
